Serves 2 (or more depending on the size of the courgette)
There’s a lot of courgettes in my Istrian garden. Unfortunately, Phil’s none too fond of them, so I developed this courgette dish to go with BBQs and grills.
Ingredients
- 1 large courgette
- 1 red pepper, chopped
- 200 ml passata
- 1 onion, chopped
- 2 cloves of garlic, chopped
- 1 tbsp Worcester sauce
- ¼ tsp chilli powder
- 2 tbsp fresh oregano, chopped
- 2 tbsp Parmesan, grated
- Salt & pepper
- Olive oil
Method
Slice the courgette into c. 1 cm thick slices. Coat them in olive oil. Season both sides with salt and pepper.
- Grill them until they are almost black – best is on a wood BBQ, but you can do it under the grill if necessary.
- Fry the onion and garlic in a little olive oil until soft.
- Add Worcester sauce, chilli powder and passata and bring to the boil.
- Add the red pepper.
- Put grilled courgettes into a flattish dish. Pour onion and passata mixture over the top: sprinkle with Parmesan.
- Bake in the oven at 200°C for about 20 minutes until the cheese is melted and brown.
Note: this dish is very tolerant and can be cooked at a lower temperature for longer.
