Courgette & red pepper bake

 There’s a lot of courgettes in my Istrian garden. Unfortunately, Phil’s none too fond of them, so I developed this courgette dish to go with BBQs and grills.

 

Ingredients

  • 1 large courgette
  • 1 red pepper, chopped
  • 200 ml passata
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tbsp Worcester sauce
  • ¼ tsp chilli powder
  • 2 tbsp fresh oregano, chopped
  • 2 tbsp Parmesan, grated
  • Salt & pepper
  • Olive oil

 

Method

  1. BBQ-courgetteSlice the courgette into c. 1 cm thick slices. Coat them in olive oil. Season both sides with salt and pepper.
  2. Grill them until they are almost black – best is on a wood BBQ, but you can do it under the grill if necessary.
  3. Fry the onion and garlic in a little olive oil until soft.
  4. Add Worcester sauce, chilli powder and passata and bring to the boil.
  5. Add the red pepper.
  6. Put grilled courgettes into a flattish dish. Pour onion and passata mixture over the top: sprinkle with Parmesan.
  7. Bake in the oven at 200°C for about 20 minutes until the cheese is melted and brown.

 

Note: this dish is very tolerant and can be cooked at a lower temperature for longer.
