Asparagus with spinach sauce

Šparoge s umakom od špinata

Serves 4


  • Handful of asparagus (tips and softest part)
  • 2 tbsp milk
  • 1 tsp lemon juice
  • 250 g spinach
  • 2 tbsp parsley, chopped
  • 1 small onion, chopped
  • 2 tbsp fresh tarragon, chopped
  • 2 tbsp fresh chives, chopped
  • 1 hard-boiled egg, finely sliced
  • 250 ml mayonnaise
  • 1 tbsp sour cream
  • ½  red pepper, chopped


  1. Cook the spinach in boiling water for a few minutes. Drain and chop.
  2. Put the asparagus in a pan with just enough water to cover. Add salt, milk and lemon juice. Cook until tender, being careful not to damage the tips and then drain.
  3. Put the spinach, parsley, onion, chives, tarragon and egg in a small bowl.
  4. Mix in the mayonnaise, sour cream and red pepper.
  5. Pour spinach sauce over the asparagus.

 Tip – Don’t throw away the tough parts of the asparagus, make a soup!
