Šparoge s umakom od špinata
Serves 4
Ingredients
- Handful of asparagus (tips and softest part)
- 2 tbsp milk
- 1 tsp lemon juice
- 250 g spinach
- 2 tbsp parsley, chopped
- 1 small onion, chopped
- 2 tbsp fresh tarragon, chopped
- 2 tbsp fresh chives, chopped
- 1 hard-boiled egg, finely sliced
- 250 ml mayonnaise
- 1 tbsp sour cream
- ½ red pepper, chopped
Method
- Cook the spinach in boiling water for a few minutes. Drain and chop.
- Put the asparagus in a pan with just enough water to cover. Add salt, milk and lemon juice. Cook until tender, being careful not to damage the tips and then drain.
- Put the spinach, parsley, onion, chives, tarragon and egg in a small bowl.
- Mix in the mayonnaise, sour cream and red pepper.
- Pour spinach sauce over the asparagus.
Tip – Don’t throw away the tough parts of the asparagus, make a soup!
